( in the 5s), the odd digression is ok. It will not send you blind or affect your nervous system.

Thanks for your very supportive comments, and it's great to hear how you've maintained your T2D control without the need for meds for so long. Well done!
Thanks also for the heads-up about the Slendier Konjac Rice. I'll look out for that and give it a try.
Once I realised that my T2D was actually a Dietary Disease, and actually required a Dietary Solution to "Fix" it, it made a lot of sense to me that I needed to find those foods that didn't harm my health, and to keep those spikes low.
I also now realise that most pharmaceutical companies are among the wealthiest corporations in the world, yet they have completely "Failed" to produce a remedy to reverse T2D. (Of course, why would they want to? They still make lots of money)
All they can do is provide products that may relieve the symptoms of T2D, for as long as you pay for and take the drug, but they Can't Fix it (T2D).
Having said that, we who have achieved Remission from our T2D by successfully changing our way of eating and regaining our overall health, are also at risk of our T2D returning, if we were to give up and return to a SAD-type diet. (But why would we do that!)
What naturally followed with my Dr Google searches about all things T2D, found me looking up all sorts of low carb and keto-type recipe websites and joining low carb Facebook groups.
It was actually a bit of fun to find foods that I really enjoyed, were very low carb, and very simple (for me) to prepare.
After being in T2D Remission for so long, I too have a few moments where I trip up on my rules, but I tend to call these minor issues, and regard them as a Reward to myself for being mostly good, and then get back on the wagon fairly quickly.

So good to hear from you. You have been quiet too long. Also good to hear you are still researching and saving us a lot of time by writing about it.
l have learnt so much from you, in particular the elimination of foods that spike. I do think we need to talk about what constitutes a spike. I tend to think anything above 8 is a spike, but no one has yet discussed a number in this forum as far as l know. Especially newly diagnosed people need some guide.
Doing what you did ( though every now and then l eat something l should not), l have never had to go on meds in 10 years. I keep reading that Diabetes is a progressive disease but with care l hope to stay off meds. I even take my own noodles to Asian restaurants and ask them to use that. No problem.
The brand that has less than 1gm carbohydrate is "Slendier". It uses Konjac, a vegetable to produce " rice, noodles - thin and thick- and pasta". It helps with fatty liver and sugar level AND it is enjoyable in foods that use pasta or rice. You can get quite creative with food if you look on this as a challenge, not a burden.

Dennis Pollock from the Beat Diabetes YouTube channel, has recently been reviewing an investigative Journalist type book by Gary Taubes, titled "Rethinking Diabetes"
I've attached a link to his final video review of this book which has thrown up some enlightening issues for thought, for all of us.
He describes how T2D has evolved over the decades to where we are now, acknowledging that there is still lots of confusion and completely different views about how we can manage it effectively, even in 2024.
For me, the light came on when I began testing myself before and after each new meal type (as recommended by Dennis), to establish how different foods effected my own blood sugar levels after eating them.
Quite simply, if my BGLs spiked after a food type was eaten, I would simply eliminate that food from my diet, Not Reduce it, Eliminate it.
I did this with needle pricks, but the same can be done with a CGM, if available.
You would only need one for a few months, max.
Within a few short months, I had developed my own personal "No Spike" food menu, or way of eating, that has served me very well for the past five years of being in Remission from Type 2 Diabetes.
My achievement has also allowed me to happily and totally ignore all the confusing Fad Diets and recommendations from all those professionals that would give me their Learned Advice about what I should be eating, no matter how well-meaning they were.
I achieved my Remission within six months, lost 30kg, significantly improved my overall health and fitness, and my Hba1c has remained in the low to mid fives ever since, with no meds needed the whole time.
However, within the first six months, I effectively eliminated; (but that's just me)
- all bread and wheat flour products
- Potatoes, chips and other starchy vegetables
- All Rice and Pasta
- Beer
- Cereals and grains
- And most fruits
I now consume foods that I totally enjoy, and as much as I like.
